Does changing WOT fuel affect part throttle fuel?

ive heard that a 180 t stat can help reduce knock and improve performance, is that true? would you recommend it?

ok updated the crom, went out on a stock run (only mds off) then installed the 91 tune (mds off and +20% throttle sens) still getting spark knock under heavy load right before it would downshift about 50%+ throttle (on the plus side i didnt get any LT knock this time)

could spark plugs cause this ...
