Changing parameters in tune

I installed a 91 octane cai tune in my magnum. I want to get in and change fan settings so I can put in a 180 degree t-stat. How do I actually get in to do that. I looked and didn't see a spot to modify parameters. I did make quick changes like shift firmness and tire sizes. I read the manual but it seems kinda vague to me. Do I go into performance tune, then click on modify stock tune??

pick the tune then choose the option to modify the tune when it asks

Can i change tunes without going back to stock. Say i want the 91 octane non cai tune. Can it write over the old tune.
