Also, if I add headers and cat back, what tune presets should I use?

No presets. A CMR tune is required with a blower.

I would imagine that Vortech will be offering a Predator with the kit to allow for plug and play operation on stock/mildly modified vehicles.
There is no way you can tune it yourself with a standard Predator, this would require a custom tune.

No, never....
Any FI application should always be run on the highest available octane unleaded you can get.
If its less than 91 octane, you drive like Grandma.
