Logging parameters for clogged converters

I have a Trinity on a 2004 Dodge 3500 5.7 Hemi that's throwing 0420 and 0430 codes. Are there ant parameters that I can log or gauge to check the cats? Maybe exhaust temp an O2 or something like that?

you'd monitor o2 voltages and compare the front sensors to the rear sensors.
