On a Z06 using the K&N 63-3060 aircharger 12% gains in flow are seen at the MAF. How many % does the default program offer and how can I adjust these settings. There is not a place in the u7194 to adjust these parameters that I have found...just "Power enhancement WOT high and low rpms"
Also, is the Cat over temp deleted? If not how can I do that?

The proper way to dial in the extra flow of the CAI would be to zero out your LTFTs at cruise using the injector slope, and then use the WOT PE parameters to dial in the WOT LTFTs.

Mike, I gained nothing by your reply. You need to speak to me like a customer, not a Diablo employee. I have over a dozen customers to explain this too and if I tell them your reply I will be told to shove these Predators up my ass. I have spent an entire day talking to Cole and Dan at Diablosport and they said Johan knows the answer....we don't.

COT is not disabled in the tunes, as this is necessary to keep the cats alive and well.
If you have removed the cats, you can disable the COT under the Modify tune menu.

Sounds like you got the increase in airflow sorted out via phone.
Mike is correct that due to the increase in airflow provided by the K&N one should use the injector flow rate(slope) to bring the long term fuel trims(LFT) back to factory levels, +/-5%. As with an 12% increase in air flow you would likely see and 10% increase in fuel added at cruise (would be verified by logging data), based on the 10% positive LFT's you would need to decrease your injector slope by 10% to bring your trims back to the 0% mark. All the trims do is bring your a/f mixture to stoich 14.7:1 regardless what their values are(-20 or +22), if they exceed 25% either way you will get a lean or rich light however.
That would be basically all you would need to do to accommodate the K&N air intake.
For the COT, i would not recommend turning that off unless you did indeed remove the cats as otherwise you will melt them, you could possibly increase the cot delay some more, we increase it from 5sec to 30 sec, you could bring it up to 45sec, i would not go higher than that though.
Hope this will suffice.

About the slope adjustment...do I need to log data to determine the adjustment or are you saying to just lower the injector slope by 10%?
