Is there a tuning option to tell the ECM, what temperature thermostat is installed in the cooling system?

No... the stock t-stat on those trucks is 207*.... and the preset tunes make changes to the fan settings based on the stock t-stat...
fan power can not be adjusted for anything lower than 192* anyway, so if you change the t-stat, I would not go any lower than a 194* t-stat... otherwise, a colder t-stat, will not allow the engine to get up to its normal operating temps... and doesn't gain you anything anyway...
