Using a U7198 on a 99 Vette with Callaway Intake, Kooks 1 3/4 headers, Kooks Catted X pipe and Corsa Exhaust.
Is there any pre defined tunes for this kind of setup (Intake,Headers/Exhaust) or do I have to log
and adjust the Timing and the Fuel trims.
Is there a baseline performance tune that I can enhance?

Do some logs to see where your ltft's are at normal cruise/driving, and also your O2 readings at WOT. Using that info, you can start with the Performance Tune and when you go to install it, choose Modify to go in and adjust the necessary parameters.
I'm not sure about what's available on your Predator model, but I know on mine I can only adjust the timing for WOT.

You can use the live data to see what is going on and dial in the fuel trims. This will improve driveability. Then dial in the fuel trims at WOT.
For best results, you should use the where to buy tab above to find a CMR dealer in your area that can create a custom tune for your setup on the dyno.

The performance tune is good for vehicles with minor bolt ons, the only bolt on you have that would require additional tuning is the headers.

So the performance tune would be fine and then I would just have to
adjust for the headers via timing and fuel trims?
If I am pulling a cat error with the Kooks catt'd Xover pipe can I disable
them with the Predator without turning the COT off? or do I just use
the 02 sensor disabled function?

Yes, simply disable the rear O2 sensors under the OBDII parameters.
