im on stock fuel system and never changed out my fuel filter and have about 90,000 on my all fuel system
Stock tune sounds a little leaner than normal, everything else you've said sounds fine.
The "fuel filter" is made into the pressure regualtor and they're about $120. A simple fuel pressure test at WOT would varify whether or not there's an issue with the fuel system suppling enough volume.

how much fuel pressure should i have at wot and does the dsp log fuel pressure or do i need to hook up a gauge

Fuel pressure should be the same as it is at idle--58psi +/-5psi.
No the PCM doesn't monitor fuel pressure. If it did, it would adjust for it. Attach a pressure gauge to the rail and I tape mine to the windshield temporarily.
