2006 C6 with Modified Exhaust and No Cats

I just purchased a 2006 Corvette with a manual transmission and the Z-51 options package over the internet. It also has a full aftermarket exhaust and air intake.
The problem is when it showed up I have been fixing everything that's wrong with it. New tires, brakes and a check engine light that won't go away...
The vette has a full aftermarket exhaust but... The Chevy dealer said that the Cats were removed and that the error codes that are showing are... 1) the Cats are removed (obviously) and 2) that the engine is running lean (according to them most likely from the headers and missing cats).
Thier recommendation was to just ignore the check engine light an enjoy the car. Seemed a little strange. I don't think the car is running to it's full potential and would like to figure out what is the best way to resolve it.
If I ordered a Predator would I be able to stop the error codes for the missing cats? And, would that get the computer back to running it's best with this combo or would I need a full computer program rewrite specifically for this car?
I am an old school car guy and the computer controls and all the new technology is foreign to me. My old project car is a 1972 Chevy Nova with a MSD ignition.... Much lower tech! So... Appreciate any and all input.
