need costum tune for U7165

I have a 2004 f350 6.0 L, I use it to tow a 40' goose neck, I have sealed the egr entrance at the manifold, the vgt valve is closing the turbo to compensate the lock of flow to the egr, also I have installed 5" exhause from the turbo to the back. The engine is running to cold 184 to 188 degree with the air or defrost on, when it gets to 195 it runs good. can we tell the computer that 182 degree is good running temperature. for my Hotshot work, I need fuel economy. also I have 16" rims and the speedometer is 2 miles off from the computer speed.
