Whats the difference in running the trinity on the extreme tune 160hp while towing or having a power puck stack with the trinity on tow 60hp and the extreme power puck turned up all the way to 100hp for a total of 160hp again?

The issue is EGT....if you are monitoring it, you can see what works for you, but if you do not know your EGT, you should not go any higher than the tow tune when pulling more than 8K pounds.

I don't have the puck but my egt's rise quickly when you get in it unloaded on extreme. Unless the puck helps cool them down I wouldn't want to tow anything on that setting.
