2010 Dodge Challenger SRT8 automatic
I just took the car and had an Moroso oil catch can, and Jet 180 thermostat installed. Being a newbie at the Predator I had the guy from the performance shop load up a 93 octane tune. I then drove the car around pretty aggressively for about a 1/2hour. I noticed the temp. going up and up past 220+
On my last WOT run I let up on it and the car shut off and the oil can icon was showing on my dashboard. Seems like the car got too hot, yes? It restarted right up and I parked it and came here to see what went wrong?
Do I need to go into the predator again and customize something because of the Jet 180 was added?

Have to checked the engine oil level ?. Sounds like its fairly new but you should check just to make sure. The temp should not have gotten that high if the thermostat was installed correctly. If any thing it should be running to cool with that 180 stat.

You still need to adjust the fan settings. Installing the thermostat doesn't change the settings for you.

when the colder t-stat was installed, there was some air left in the cooling system. Theses cars burp kinda hard. There should be a plug in the water pump to alow the air out as it was filled. Pull plug, fill, reinstall plug when water comes out of hole.

Thanks peoples! I'll have an answer in about an hour. It's back at the performance shop right now.
fast, the performance shop said they were gonna do what you just said first (at least it sounded that way only they used different terminology).
In any case, I should be fine in the end. Either that is the problem, or it's a bad one, or it was installed wrong. Worst case, I put the stock back in for now till another one comes in.
Wanted to ask though...what do I adjust my fan settings too on a 93 canned tune if I'm running the 180? What do I do if I'm using my stock thermostat?

Stock thermostat, any tune, do nothing.
180 thermostat, any tune, or no tune, lower fan settings...
There are many opinions on what the settings should be...
Here's a couple threads on the subject.

Generally lower the stock settings by about 20°
There are 9 settings , AC on/AC off so try 207° for the high (HS) and medium (MS) and 196° for the low (LS) in all settings.
Some go even further with with 198° for HS and MS, and 188° for LS. Of course the lower you go, the more frequent the fan runs.

fast was apparently right on the money! The guys at my shop "burped" it and it's running fine far as I can tell, although I didn't hammer on it as it was raining out. They ran it though and said it was holding temp at around 180. Thanks fast!

What happens to your car if you do nothing with fan settings in my particular situation.

I didn't think to mention that... would have guessed a bad thermostat before a shop not getting the air out. That's pretty basic.
Every tune you load, even if it's putting the factory tune back in you'll need to modify the fan settings to the new temps, yes all 9.
No harm if you don't, it'll just run a little hotter, after running awhile, but shouldn't get hotter than stock.

I don't like to be the bearer of bad news; but, I'm telling you this for your benefit, "just in case."
You need to keep all your receipts from that shop and document what happened.
If there was a significant air pocket, it could mean that no coolant was flowing for that time. And that's a long time to go without cooling. If you saw temps on your gauge right around 220 you're probably fine. But if it went a lot higher than that, someting could have stressed or warped. Probably not, and I hope not, but in case it did, you'll need to prove "who" did "what."
If they didn't bleed the air out of the system (per the service manual) and that caused any problem, you'll be glad you have receipts and a record of the events.
Again, I hope all is well and it never becomes an issue for you.
