2000 Ford F-250 tire size

On the u7170 with the newest revision how do you go through and change the tire size? It has 315/75/16 with a rev per mile of 601 and can't figure out how to adjust the tire size. I have two Mustangs that I play with all the time but the way you change tire size on them is easy. As far as I know the rear gears are stock but it is reading 5 over at 55, we tested with gps in the truck, what do we need to do to get this resolved?
