Silverado programming help needed

I have a 2011 z-71 4x4. 5.3L with k&n filter and flow master muffler in place of stock one. Used the original pipe otherwise. I have the 87 octane tune installed and modified for my 33" tires. Other than top speed limiter and tire change I don't know what the other settings do and if I should have them on or off or leave them alone. (COT, COG). Any help is appreciated.

You can leave them alone and it will run fine. Disable DOD (AFM) and it will be much better to drive. IMO disabling the AFM is a must, makes the truck run like it should.
To make it even better, you can do some data logging and get your fuel trims dialed in. I have had my truck running the 87 Octane tune but still did not do the logging, will get around to it one day.

Cot is for off road I believe it cools the catlitc converter and cog is skip shift for six speed manual transmission leave em alone

the COT is for catalytic over-temp protection... if you still have the cat converters on the vehicle, don't touch it... if you have removed the cats, then you can disable the COT... and you will also need to get a custom tune done in order to have all the rear O2 sensor codes and cat converter codes disabled...
