Air Fuel ratio for WOT

I have a predator with version 2.07 on it. I put long tube headers and a svede otrcai on my 2004 GTO. I have been doing logs manually with my brother writing down the changes in the long term fuel trims and have them dialed in pretty well. My question is if I can see my air fuel ratio in real time with this predator? Am I overlooking it or can I just see my O2 sensor voltage readings? Can I tune the car for WOT using these readings? I had to adjust my injector slope by -6 to get my fueling dialed in, should I just half that for WOT and do -3? Any help would be greatly appreciated.

Can anyone help? Would dialing in my long term fuel trims affect WOT? Would it lean it out or make it too rich, anyone?

No, you need a wideband to see AFR on any vehicle.
