I've got a 1999 Ford SVT Cobra and a 1999 Ford Mustang LX v6. Is it possible to tune both cars without having to reset the other vehicle to use it on the other one?

No, the Predator will only program 1 vehicle at a time. You can use the Data Monitoring/Logging and Diagnostics features on any amount of vehicles you want.
