Octane tunes

With the various octane tunes, do you have to run that specific octane gas? For example, I know of some folks that are running 89 and 93 performance tunes but running on regular 87 octane gas. They said as long as it doesn't produce any knock, they say it's fine and they are getting much improved performance.
