which Predator would i use on a 2000 S-10 Extreme 4.3 4L60 Headers, cat back dual exh,. ported TB, CAI,. 4:10 gears

none.. because #1 the predators are all dead and gone.. they were all discontinued a few years ago.. and #2, that vehicle/engine is not supported anyway...
