Would the addition of a 180 deg. thermostat slow a car down when tuned with the 91 octane tune? I ran with the stock 203 stat before. Since I installed the 180, I got a serious slow down.

No, it should make it quicker. The motor is running cooler if you set the fans right (181/188/188).
