Trinity analog and AEM wideband question

I've searched but am having trouble finding answers to my two questions. I have a trinity, aem 30-4100 wideband, and this 2.5mm mono jack ( http://www.vetco.net/catalog/product_in ... ucts_id=77 ). Everything is wired up but here are my two questions:
1. I know I should set the A/F lower limit to 10.0 and the upper limit to 19.99 but how do I go about figuring if I need to adjust the upper limit....I have watched several videos and the upper limit needed to be adjusted down to say 19.33 to get a more accurate A/F log. (as in this video http://www.youtube.com/watch?v=m9hd1U6oFwI )
2. Is there a way to slow the sample rate with the AEM when logging A/F with the trinity? When I am logging the A/F ratio at WOT it is pretty jumpy.....how would I go about getting a more smooth WOT a/f ratio log line? Thanks for the help!
