I just bought a used U7131 for 06-07 cummins only to realize the truck I'm installing it on is an 05 and it's not supported, please tell me there's a way to get around this issue and I didn't just waste my money??

well, you kinda answered your question, the U7131 is for 06-07, it will not work on an 05.
You can send it in for a conversion for $99 if you like.

Looking like that might be my best option if I can't sell or trade it for the correct one. Thank you for the info how would I go about sending it in?

Where is the return form? Not having any luck finding it. Would it be the same as the reset/unlock form?
