Octane rating & Manual Shifting on Sierra 2011 5.3L

Wondering with the Diablo Tune if it's ok to switch between 91 and 94 (AKI) Octane gas? I am under the impression you can use 91+ with the Diablo Tune? What about 101 Octane Gas? Just for fun.... don't want to harm anything though.
I don't see how gas that is more pure would harm things.... obviously it would combust easier. I'm guessing it'd be ok for anything but redline use?
Concerning Manual shifting.... I saw a feature on the Diablosport Website that mentioned, basically full control over the Manual shift mode? No more upshifts and downshifts? That would be amazing.... I'm hoping this is supported.. I can't stand how it does what it wants. I rarely ever let RPM go over 2k while cruising either.. it's a bit much and I'd LOVE to tune it out.
Thanks!
Love my Trinity BTW. Without it I would have had to do a transmission semi-rebuild. Shift pressures/RPM value adjustments have allowed me to tweak around it's current physical condition and buy me some time to find a nice decent condition 6L80E to rebuild, then swap with my own.
Kudos boys, great tool.
