Tstat and cooling fans

Good evening everyone. I am reaching out to you due to my limited knowledge on the subject and please don't think i haven't already searched this one out. I have a 16 Challenger Scat Pack A8, with current mods being, not that may make a difference, 180degree t-stat, JLT CAI, JLT catch can, MSD coils, and MFR-1 to keep the exhaust baffles open without causes a check engine light. As for tune, i pushed the Diablo tune with MDS off, throttle booster set to 10%. Now for my dilemma, when it came to setting the cooling fans, in some post i have read there should be high and low settings, i only have a setting for "desired ECT". As far as desired ECT, i have read in post that i should set that to 195 degrees. Being me, i set it 190. After driving yesterday on 95 degree day, my temp reading still got up too 200ish. My question to you all, am i doing something wrong? Am i set to high? Should I lower the ECT more? I have the i2 handheld tuner and do keep it updated. up until now i have never modified any setting so i am new to tuning and learning as i go. Any and all help is appreciated.

Set fans at 187* low speed and 194* high speed. Expect to see nominal at 185*.

187* low speed and 194* high speed is that with AC on settings as well?
