if you set it to 185° then load the tune, it should indeed be writing it to 185. It doesn't save the value to see what its programmed to next time you go in and look at it.
You can post your last tune written here so I can confirm for you if needed.

If you get the P0128, its due to the tstat being cooler than dodge likes and it causes that code in cooler weather, we can adjust it for you to keep it from happening if you post the last tuner written.

Here you go, load this and the tstat issue will be gone.

My 2016 5.7 6 spd is doing the same thing. I contacted Diablo and they told me it will not hit that 185 i'm looking for. I can't get it to drop in th 180's at all. I have the 797 thermostat delete and every single time i set it to 185 it will revert back to 194 or higher, lowest it will hit is 192. The 194 is what i originally had it set at with the 190 tstat i had in it. Frustrating.

with no stat, coolant will never sit in the radiator long enough to get cooled off, I dont think targeting 185* is going to help there.

It's an actual restrictor plate so not the same as no tstat. Others are using it and even from the site it states to use as a 180 tstat if using the middle one which i am. They have stated it should stay between 180 - 190. On top of this when i had the 190 in the setting saved no matter where i put it, i put this in and it will not save my setting. Confused. Thanks

The main thing here is the I3 is not saving my setting for ETC. It will if i stay from 190 and up, but if i punch in anything from 189 down, it will not save.

I set it at 185 last night and just checked it and its 194 again, i just now set it back to 185. Every other setting i make saves and stays. Thanks and i attached it

Also wanted to add, not just the saving part bu i know it's reverting back because the car tries to stay around 194 and that is the intial setting i had when it had the 190. If i set it to 185 and even if the fans were roaring like a jet plane it should at least try to hit around that and it doesn't. I'm not a tuner but have to believe there is something in the tune from Dodge that is keeping it from going into the 180's( from your original post)

Thanks for helping.

After a decent drive it's hovering mainly around 195-200, re-checked the setting and it was set at 194, this makes no sense.

when you go back into the parameter, its always going to default to 194, that does not mean that is where it is set.
In this screenshot, taken from your tune, you can see the target temp is 85*C across the board, which equals 185*F, therefore the pcm is attempting to target a 185 ECT.

skip shift should have been disabled by default, but i see it was not.
Load this custom tune to the device then to the car and it should kill skip shift ;)
