2016 GMC Sierra SLT 5.3L - What's the right tune ranges?

I have 2016 GMC Sierra SLT 5.3L - I've been modifying the variables of the stock tune, which you can apply off the advance tune selection.

I've already did the following:

DOD - off
Speed limiter - off
Throttle - 12%
Tire size 285/45/22
TOW - 5K-7K, but left the spark calibration @ 0.

Everything else was left stock.

What else should I modify? (Example: Fan, Spark)

Also how do I modify for peek power and torque - I tried installing the Diablo or 87 tune, but both disable my reverse and drive throttle response. Its completely dead with no revs..

If you tow you'll want to modify the fan settings to keep the oil cooler (which keeps your pressure up).
