When you use a lower temp tstat you need to use your Trinity to go modify your tune settings, and set your electric fans to engage at id say 178* but u can set it to 180*. I'm not sure what to tell you about your wide band AFR gauge, but I do know the trinity will accept input from external sensors as well. Your factory o2 sensors probably aren't getting as good of a reading as the AEM wide band.

Ignition - Actual Sparks cylinder 1
